At Maison Pierre Marcolini, our beans are roasted directly in our workshop. This process allows us to develop flavours that are unparalleled across the globe.
The first step is to carefully select the beans. Every year, Pierre Marcolini himself travels to different parts of the world to visit growers and choose the finest cocoa beans.
Back in the workshop, a meticulous, precise roasting process takes these beans to a new level of flavour. Depending on the type of bean and the roasting temperature, this stage may unveil smoky, tangy, or floral notes.
The artistry of dedicated craftsmen
The new Malline Découverte is the result of many months of research and development. It all begins with a quest for inspiration: a journey, an ingredient, or a conversation can be the catalyst for new formulas and recipes.
Pierre Marcolini, along with his R&D (Research and Development) team, then labors to bring these ideas to life. That means exploring ingredient pairings, trying new techniques, and discovering unique compositions.
Once the recipes are finalized, it's time for the process of production to take center stage. All chocolates are handcrafted in our Brussels workshop.
These 31 new chocolate creations are then delicately placed in their jewel case, ready to grace your homes or to become treasured gifts.
