Historical Background


Pistachios were discovered in the Middle East in 7000 BC. They quickly spread to the Venetian Republic, Rome, and Greece, where they became a rare delicacy. They were only brought to the United States in the 19th century, but they’ve been iconic ever since. Ancient civilisations saw them as a symbol of wealth. We think they deserve their “delicacy” label.

Geographical Origins

Pistachio nuts grow naturally in Iran, Syria, and Turkey thanks to the hard work of cultivators more than 10,000 years ago. Italy began cultivating them under Arabian rule before this nutty fruit spread to the Alps. In those days, producers used grafting to draw out the best traits of every tree. Ancient civilisations developed an earthy, buttery variety that was sweet and woody. By the 1880s, only the Middle Eastern region was capable of cultivating pistachio orchards on a commercial scale.

Expansion to Other Regions

In the 10th century, pistachios found their way to China along the Silk Road. They were prized for their nutrition, complexity, and extended shelf life. The United States caught pistachio fever soon afterwards. The American botanist, William Whitehouse can be thanked for developing the iconic “Kerman” variety in California in 1931. It has a creamy kernel and a crunchy outer shell, but its flavour evolves depending on the climate and soil of each harvest.

Pistachios from Iran are rich, aromatic, and irresistibly sweet, so they truly bring out the heart of the right cocoa bean. They have a green hull and a firm bite.

Where Do Pistachio Trees Grow Best ?

Pistachio production is at its best in warm, dry climates and long summers. The soil is an important contributor. Growers need well-drained soil and plenty of water. Plantings can, nonetheless, thrive in some parts of the Alps because they can tolerate cold winters and droughts relatively well.

Modern Cultivation

Pistachio producers still rely on grafting to control their quality, but the industry also puts plenty of focus onto the make-up and drainage of the soil. Some growers alter the flavour of their fruit with sea brine and varied water sources. You can’t simply create a pistachio orchard in a season, though. Trees must grow without fruit for years so that they can spend their resources developing powerful root systems.

Key Producing Countries

Iran and Turkey are still key pistachio producers, but the United States has joined their ranks. Together, these nations produce 90% of global pistachio yield. Unsurprisingly, Syria, China, and Afghanistan are still significant producers.
