Ingredients for Chocolate Ganache


Our recipe will serve eight and is made with raw beans. It will take you less than 15 minutes.
120 g single cream
35% fat
20 g caster sugar
160 g primitive chocolate
40 g soft butter
You needn't rely entirely on your scale. You can vary your measurements to alter your ganache's consistency and taste.

Basic Ganache Recipe Instructions
Boil your cream to 80 degrees in a pan or microwave, then drizzle it over the chocolate with a spatula or tablespoon. Whisk your mixture well with an electric mixer or immersion blender until it develops a ‘mayonnaise’ texture. When your emulsification is complete, add the butter in small pieces to enhance your flavor. Finally, mix it again with a whisk for a few minutes to prevent a grainy ganache texture. The correct ratios for ganache are two parts cream to three parts chocolate. You needn’t change your chocolate-to-cream ratio to achieve a thick consistency, though. Thick cream can achieve a thicker ganache that doesn’t dilute your chocolatey flavour. If you find your recipe too thick, simply reheat some cream in a cup and add a little to your mixture. Who says baking has to be hard?

Optional Add-ins for Flavor

Liqueur will add a sophisticated note to cold and warm ganache alike. Extracts can also add an interesting taste elements, but if you’re feeling fruity, whisk a puree into your mixture instead. Peanut butter and hazelnut cocoa spread will bring moreish nuance to your dish. You can even add a spoon of espresso powder to deepen your flavor and thicken your ganache recipe.
