How to cook chocolate covered strawberries ?

The Recipe

Serves: 4–6

Preparation time: 25 minutes

Setting time: 15–20 minutes at cool room temperature

Ingredients

  • 500 g ripe strawberries, firm and with the leaves left on
  • 200 g Cocoa Fusion dark chocolate drops (82% cocoa)
  • 20 g cocoa butter (optional, for extra fluidity and shine)
  • A pinch of fleur de sel (optional)

Instructions

  1. Wash the strawberries and dry them completely with paper towels, keeping the leaves and stems intact. Any trace of moisture will stop the chocolate from adhering. Let them come back to room temperature before dipping.
  2. Place two thirds of the chocolate drops in a heatproof bowl over a saucepan of barely simmering water. Make sure the base of the bowl does not touch the water, and keep steam away from the chocolate. A microwave gives you far less control over the melting process.
  3. Stir gently with a spatula until smooth and glossy. Add the cocoa butter now if using.
  4. Take the bowl off the heat, add the remaining third of the drops and keep stirring until fully melted. Cooling the chocolate this way is what gives the finished shell its shine and its clean snap.
  5. Hold each strawberry by the stem and dip it into the chocolate, turning it to achieve an even coating right up to the leaves.
  6. Lift the berry out, pause for a moment and allow the excess chocolate to drip back into the bowl. A thin coating always tastes better than a thick one.
  7. Place the dipped strawberries on a tray lined with baking parchment, spacing them so they do not touch.
  8. If desired, sprinkle a few flakes of fleur de sel over the chocolate while it is still wet.
  9. Leave to set for 15–20 minutes at cool room temperature, ideally around 18–20°C.
  10. Arrange on a serving plate and offer toothpicks alongside.
